Mastering the Craft of Peking Duck
Its price reflects the intensive labour, time, and ingredients required. The duck is marinated and sealed, then basted and coated with sauce to achieve a crispy skin. Next, it is left to air-dry for hours (often overnight) to further enhance the skin’s texture and further marination. Finally, it is roasted in special ovens—sometimes wood-fired—for a deep, smoky aroma and perfectly-even skin

Additionally, some restaurant only receive specially-raised ducks, prized for their tenderness and uniform fat-to-meat ratio. Roasted or braised duck dishes typically focus on the meat and are marinated, roasted or stewed without the same emphasis on its skin. These preparations may be rich and flavourful, but lack the elaborate, ceremonial process unique to Peking Duck.
Is Peking Duck Halal?
The short answer—no.
Most Peking Ducks are not prepared in accordance with Islamic guidelines and in non-halal kitchens. Marinades may also contain rice wine or Chinese cooking wine. In addition, condiments and accompaniments may contain alcohol or animal-derived ingredients.
How Many People Does a Peking Duck Serve?
