Hokkien-style Abalone Fried Rice with Black Truffle
Not all fried rice are cooked the same! You may read more about them here. Many of us are familiar with Yangzhou Fried Rice, but here’s a lesser-known style of whipping up that tasty leftover rice: Hokkien-style. After frying, a thick, seafood sauce is poured over the rice, which gives it a rich, umami taste. While this is an uncommon dish to serve in Cantonese establishments, Chef Chung explores a different cooking style by incorporating this into our month-exclusive menu.
Braised 10-head South African Abalone with Crocodile Palm
Another dish with an uncommon ingredient – Crocodile Palm, this definitely isn’t for the squeamish. If you’re accustomed to Chicken Feet, consuming this would be an easy feat (pun intended). Bearing similar texture to Braised Pork Trotters or Sea Cucumber, its gelatinous meat is eaten to boost collagen levels and is thought to nourish the lungs and improve joint health. This is worth a try if you’re looking for a unique dish served in a Chinese restaurant.
Bird’s Nest Egg Tart
