Recipe: Chicken Soup For The Holiday Soul

This is good for:

Con:

This takes anywhere from 2 to 6 hours (if you’re using a pressure cooker versus a slow cooker) to boil. Otherwise, this will be perfect for a WFH day

Chicken Soup with Cordyceps & Snow Fungus (makes 4 servings)

Chicken soup preparation

Ingredients:

15g of Cordyceps

1/2 cup of Snow Fungus 

1/2 Kampung Chicken (approx. 600g)

12 Red Dates (or more)

Lean pork (approx 200g)

1/2 tablespoon of salt

1.2 – 1.5l of water

Tips:

  • Kampung chicken is recommended as it typically contains little antibiotics, and has contains higher protein compared to other varieties
  • White fungus is rich in fibre, boosts immunity, and is believed to be good for the gut, skin and heart
  • Putting pork in soups gives the stock some natural umami (hence we don’t need much salt), as it can taste quite bland with just the chicken
  • Use lean pork muscle to cook so that the soup will be less oily
  • Jujube, or red dates are used to nourish blood and improve the overall digestive system

Steps:

  1. Soak the cordyceps and white fungus in water for about 1 hour 
  2. Wash the chicken, then poach it together with the pork in hot water for a few minutes. You may opt to wash it again to further remove blood and impurities
  3. Now, the easiest part. Combine all ingredients together in a pot and let it simmer for 4 to 6 hours. If you’re using an omnipot or multi-cooker, it may speed up the cooking duration to 2 to 3 hours.
